Chicken Ramekins

Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Chicken Ramekins

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Cut cold chicken into small dice.

  2. Add an equal amount of cold boiled rice.

  3. Season with minced parsley, cayenne pepper, and gravy if using stewed or roasted chicken; otherwise, add small lumps of butter.

  4. Place the mixture in ramekins and cover with bread crumbs browned in butter.

  5. Heat in the oven in a pan of water at 350°F (175°C).
