Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the meat that forms the body of the pressed loaf.
Gelatin
Sets the reduced broth so the chicken holds its shape when chilled.

The step that matters

Reduce the broth to the right volume. Gelatin sets only if the broth is concentrated enough; reducing it to the stated volume concentrates the natural collagen and flavor so the mixture firms up when chilled.

Swap the celery

How well each one fits the dish's main ingredients (chicken, pepper, gelatin):

  1. Tarragonfits about as well
  2. Celerythe original
  3. Garlicfits about as well
  4. Thymefits about as well

Fit is the average pairing score against chicken, pepper, gelatin. Candidates are from the same food group and used in at least 100 recipes.
