Stuffed Mangoes

Ingredients

Directions

Prepare the filling

  1. Boil the veal until tender, seasoning with thyme, bay leaf, onion, salt, and pepper.

  2. Run the cooked veal through a meat chopper.

  3. In a saucepan, melt the butter, then mix in the flour until smooth.

  4. Add the milk to the butter and flour mixture, stirring until the sauce is smooth.

  5. Combine the chopped meat with the sauce.

Stuff and cook

  1. Cut off the small end of the mangoes and hollow them out, leaving seeds if desired.

  2. Fill the mangoes with the meat mixture.

  3. Place the stuffed mangoes in a pan with a little hot water at the bottom and cook for 30 minutes or more.

  4. If using mangoes as cases, simply heat the meat mixture through.

  5. Top with bread crumbs and bits of butter or beaten egg whites.

What each ingredient does

Veal
Forms the main filling and provides the savory, meaty body of the dish.
Butter
Enriches the sauce and adds richness to the filling and the topping.
Flour
Thickens the milk with the butter into a smooth sauce that binds the meat.
Milk
Forms the liquid base of the sauce, adding moisture and creaminess to the filling.
Green mangoes
Serve as the edible cases, adding a tart, fruity flavour that contrasts the meat.
Bread crumbs
Form a crisp, golden topping when baked over the filling.

The step that matters

Cook the stuffed mangoes in hot water. Gentle, moist heat in the pan cooks the filling through and softens the mango without drying the sauce. Too little water or too high heat can scorch the bottom or dry out the meat.

Swap the mango

  1. Lemonfits better
  2. Cherryfits about as well
  3. Limefits about as well
