Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Beat the eggs very light with salt.

  2. Add flour and sweet milk, then beat all together for 5 to 10 minutes.

Bake and serve

  1. Drain some drippings from the roast beef into another pan.

  2. Pour the batter into the pan and bake at 400°F (200°C) for 15 to 20 minutes.

  3. Serve hot with roast beef.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Provide structure and lift, setting the batter as it bakes.
Flour
Forms the gluten network that gives the pudding its body and structure.
Sweet milk
Hydrates the flour and adds moisture, helping the batter steam and rise.
Drippings from roast beef
Fat that gets very hot, helping the batter puff and brown in the pan.

The step that matters

Heat the drippings before pouring in the batter. The batter needs a very hot, fat-coated pan so it sizzles on contact and rises quickly. A cold pan lets the batter spread and turn dense instead of puffing.
