The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Roll the soda crackers into crumbs.

  2. Cover the bottom of a baking dish with the crumbs.

Layer and bake

  1. Layer corn seasoned with salt and pepper over the crumbs.

  2. Add another layer of cracker crumbs, repeating until the dish is full.

  3. Place small bits of butter on the top layer.

  4. Pour ½ pint of rich milk over the entire dish.

  5. Bake at 350°F (175°C) for 30 minutes.

What each ingredient does

Corn
Forms the bulk of the dish, providing sweetness and soft texture.
Soda crackers
Crumbs absorb moisture and help bind the layers together as they bake.
Butter
Adds richness and fat that helps the top brown as it bakes.
Rich milk
Supplies liquid that moistens the layers and sets into a custard-like body.
