Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Whipped into air bubbles that give the nut cream its light, airy body.
Gelatin
Sets the cream so it holds its shape when chilled and unmolded.
Powdered sugar
Sweetens the cream and dissolves easily into it without graininess.
Blanched almonds
Add chopped texture and a nutty flavor throughout the cream.

The step that matters

Stir from the sides and bottom of the dish until it begins to set. Gelatin begins to firm as it cools, so stirring from the sides and bottom keeps the chilled cream smooth and evenly mixed while the nuts and cherries are distributed before it sets in place.

Swap the almond

How well each one fits the dish's main ingredients (cream, sugar, gelatin, vanilla):

  1. Almondthe original
  2. Chestnutfits about as well
  3. Pistachiofits less well
  4. Hazelnutfits less well

Fit is the average pairing score against cream, sugar, gelatin, vanilla. Candidates are from the same food group and used in at least 100 recipes.
