Cottage Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the batter

  1. Preheat your oven to 350°F (175°C).

  2. In a bowl, cream together the sugar and butter until light and fluffy.

  3. Add the eggs one at a time, mixing well after each addition.

  4. Stir in the sour milk and the dissolved baking soda.

  5. Pour the batter into a greased baking dish and bake for 30-35 minutes.

Make the sauce and serve

  1. For the sauce, melt the butter in a saucepan, then stir in the sugar and flour.

  2. Gradually add the boiling water, stirring constantly until thickened.

  3. Serve the pudding warm with the sauce poured over it.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the batter and helps make it light and tender when creamed with butter.
Butter
Creaming with sugar traps air and adds richness and a tender crumb to the pudding.
Eggs
Add structure and richness, helping the batter set as it bakes.
Sour milk
Its acidity reacts with the baking soda so the pudding rises and stays tender.
Baking soda
Reacts with the acid in the sour milk to produce gas that lifts the batter.

The step that matters

Stirring the sauce while adding the boiling water. Adding the hot water gradually and stirring constantly keeps the flour mixture smooth, so the sauce thickens evenly without lumps.
