What each ingredient does

Butter
Adds fat and richness, helping the filling set smooth and glossy.
Brown sugar
Provides sweetness and molasses flavour, and forms the caramel base as it cooks.
Milk
Adds moisture and dairy solids that give the caramel a softer, creamier texture.

The step that matters

Boil the mixture hard for 7 minutes without stirring. Boiling drives off water and lets the sugar reach the concentration needed to thicken as it cools. Stirring during the boil can cause sugar crystals to form, leaving the filling grainy.
