Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ripe tomatoes
Provide the main body and flavor base of the ketchup.
Coarse sea salt
Draws moisture out of the tomatoes and helps begin the fermentation.
Onions
Add savory depth and aromatic flavor to the cooked mixture.
Cider vinegar
Adds acidity that brightens flavor and helps preserve the ketchup.
Sugar
Balances the acidity and sharpness with sweetness.

The step that matters

Cook until thick. Cooking drives off water and concentrates the tomato solids, so the ketchup thickens to the right consistency. Stopping too early leaves it thin and watery, and overcooking can scorch the sugars and tomato.

Swap the onion

How well each one fits the dish's main ingredients (tomato, cider, vinegar, sugar, pepper, clove):

  1. Capsicumfits better
  2. Mustardfits better
  3. Cucumberfits better
  4. Onionthe original

Fit is the average pairing score against tomato, cider, vinegar, sugar, pepper, clove. Candidates are from the same food group and used in at least 100 recipes.
