What each ingredient does

Strawberries
Supply the fruit, flavor and most of the body of the preserve.
Sugar
Sweetens the fruit and, as it concentrates during boiling, helps the preserve thicken and keep.

The step that matters

Boil for 20 minutes over high heat. Boiling drives off water and concentrates the sugar and fruit solids. Too little boiling leaves the preserve runny, while too much can over-thicken it, so the set test matters.
