What each ingredient does

Green peppers
Form the edible shell that holds the filling and softens as it pickles.
Cabbage
Adds bulk and crunch to the filling, absorbing some of the pickling liquid.
White onions
Add savory flavor to the filling as they mellow in the vinegar.
Mustard seed
Contributes sharp, pungent flavor that lingers through the pickling.
Sugar
Balances the sharpness of the vinegar with sweetness.
Vinegar
Acidifies the brine, preserving the peppers and giving them their tang.

The step that matters

Repeated vinegar draining and reboiling. Vinegar must be drained and reboiled twice more so the peppers are fully acidified and preserved. Pouring it on cold or skipping a round can leave the peppers under-pickled and less stable in storage.

Swap the mace

How well each one fits the dish's main ingredients (pepper, cabbage, onion, mustard, clove, allspice, sugar):
