What each ingredient does

Oysters
Provide the main flavor and tender texture of the soup.
Butter
Adds richness and a smooth, rounded mouthfeel to the broth.
Milk
Forms the creamy base of the soup and adds body and sweetness.
Celery
Adds a subtle aromatic, savory background flavor to the soup.
Onion
Adds aromatic depth to the milk as it steeps during cooking.

The step that matters

Cook until the oysters are plump. Oysters cook very quickly; overcooking makes them firm and rubbery, while stopping as soon as their edges curl and they plump keeps them tender.

Swap the celery

How well each one fits the dish's main ingredients (oyster, butter, pepper, milk, onion, bread):

  1. Parsleyfits about as well
  2. Garlicfits about as well
  3. Thymefits about as well
