Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Sift the flour four or five times.

  2. Measure and set aside 1 cup of flour.

  3. Sift the granulated sugar, then measure 1¼ cups of granulated sugar.

Make the batter

  1. Beat the egg whites until frothy.

  2. Add the cream of tartar.

  3. Beat until very stiff.

  4. Gently stir in the sugar.

  5. Fold in the flour lightly.

Bake

  1. Pour the batter into a pan.

  2. Bake in a moderate oven at 350°F (175°C) for 35 to 50 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into foam that gives the cake its light, airy structure.
Sugar
Stabilises the whipped whites and adds sweetness and a tender crumb.
Flour
Provides the light structure that holds the cake once the foam sets in baking.
Cream of tartar
Acidifies the egg whites, helping them whip to a stable, stiff foam.

The step that matters

Fold in the flour lightly. Folding gently keeps the air bubbles in the whipped egg whites intact. Vigorous stirring deflates the foam, which leads to a dense, heavy cake.
