Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. Beat the egg whites to a stiff froth.

  3. Gradually add the sugar while continuing to beat.

  4. Gently fold in the sifted flour and cream of tartar.

  5. Add the flavoring and mix until combined.

Bake

  1. Pour the batter into an ungreased pan.

  2. Bake for 20 minutes without opening the oven.

  3. If using a dripping pan, bake for 40 minutes; for a round pan, bake for 60 minutes.

Cool

  1. Once done, turn the pan upside down on a rest and let it cool completely.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a foam that gives the cake its light, airy structure.
Sugar
Sweetens the cake and stabilizes the whipped egg white foam.
All-purpose flour
Provides the gentle structure that holds the foam-based crumb together.
Cream of tartar
Acidifies the egg whites, helping the foam stay stable and hold volume.

The step that matters

Turn the pan upside down to cool completely. The cake's foam structure is still delicate when hot. Inverting the pan lets gravity hold it stretched while it sets, so it does not collapse or shrink.
