Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the filling as they heat, giving it a smooth, custard-like body.
Egg white
Adds lightness and a softer, airier texture to the cooked filling.
Sugar
Sweetens the filling and helps balance the tartness of the orange juice.
Orange juice and rind
Provides the bright citrus flavor and acidity that defines the filling.

The step that matters

Stir in the egg yolks and heat gently. Egg yolks thicken when heated, but if they get too hot they can curdle and turn grainy. Keeping the mixture below a simmer while stirring constantly keeps it smooth.

Swap the orange

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Orangethe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
