Cream Puffs

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the choux dough

  1. Combine butter, sugar, salt, and water in a saucepan.

  2. Bring the mixture to a boil.

  3. Gradually sift in the flour while stirring constantly until smooth.

  4. Pour the batter into a bowl and let it cool.

  5. Once cool, add the eggs one at a time, beating vigorously after each addition.

  6. Drop tablespoonfuls of the mixture onto a buttered baking pan, spacing them an inch apart.

  7. Bake at 400°F (200°C) for 30 minutes.

Make the cream filling

  1. In a separate bowl, mix the egg yolk and cornstarch with cold milk.

  2. Heat the remaining milk.

  3. Stir in the egg and cornstarch mixture.

  4. Once it boils, add sugar, salt, and butter.

Assemble and serve

  1. When cool, split the puffs open.

  2. Fill the puffs with the mixture and replace the tops before serving.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten into the dough to give the puffs structure and help them rise and hold their hollow shape.
Flour
Forms the starch and gluten framework that sets the puffs around their steam-filled interior.
Butter
Adds fat for tenderness and richness in both the dough and the cream filling.
Egg yolk
Thickens the cream filling and adds richness along with the cornstarch.
Cornstarch
Thickens the milk mixture into a smooth, sliceable cream when heated.

The step that matters

Beating in the eggs after the dough cools. If the dough is still hot, the eggs can scramble, and the dough needs to be smooth and glossy to hold its shape and rise well. Adding eggs one at a time and beating each in fully keeps the batter stable.

Swap the vanilla

How well each one fits the dish's main ingredients (flour, butter, egg, sugar, milk):

  1. Vanillathe original
  2. Raisinfits about as well
  3. Figfits less well
  4. Coconutfits less well

Fit is the average pairing score against flour, butter, egg, sugar, milk. Candidates are from the same food group and used in at least 100 recipes.
