What each ingredient does

Oatmeal
Its starch swells and gelatinises in hot water, thickening the liquid into a porridge.
Water
Hydrates the oats and carries heat from the boiling water into the grain during steaming.

The step that matters

Sprinkle the oatmeal into the water and stir gently. Dropping oats in quickly while stirring gently helps them hydrate evenly; otherwise they can clump into lumps that stay dry in the centre during the long steam.
