What each ingredient does

Chicken
Forms the main body of the dish and provides the meat that broiling browns and cooks through.
Butter
Adds richness and moisture to the finished chicken.

The step that matters

Turning the chicken while broiling. Broilers heat from above and can scorch thin or exposed areas quickly. Turning the chicken several times exposes each surface evenly, so browning develops through Maillard reactions without burning in one spot.
