Why it works: Carrot and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 8,053 recipes. Both carry 2,4-decadienal, which smells seaweed. The science ↓
Scotch Mutton Broth
Ingredients
Directions
Prepare the mutton
Soak the mutton in water for 1 hour.
Cut off the scrag and place the mutton in a stewpan with 3 quarts of water.
Bring to a boil, skim well, and then simmer for 1.5 hours.
Cut the best end of the mutton into cutlets, removing most of the fat.
Simmer the broth
Skim the broth as soon as the meat boils and every 10 minutes thereafter.
Add the carrots, turnips, and onions to the broth.
Stir in the barley and add salt to taste.
Let everything stew together for 3.5 hours.
About 30 minutes before serving, add chopped parsley.
Serve
Serve the meat in a tureen with the soup, and the remaining mutton on a separate dish with whole boiled turnips.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Neck of mutton
- Provides the meat and rich, gelatin-rich body that flavours the broth as it simmers.
- Barley
- Releases starch as it cooks, thickening the broth and giving it body.
- Carrots
- Add natural sweetness and body to the broth during the long stew.
- Turnips
- Soften during the long stew and add mild sweetness to the broth.
- Onions
- Build savoury depth and aroma as they soften into the broth.
The step that matters
Skimming the broth. Foam and fat rise as the meat comes to a boil and keep rising during simmering. Skimming regularly removes them, keeping the broth clear and less greasy.
Swap the onion
How well each one fits the dish's main ingredients (mutton, carrot, turnip, barley, parsley):
- Leekfits better
- Parsnipfits better
- Shallotfits better
