What each ingredient does

Roast-beef bone
Releases gelatin and savory flavor into the water as it simmers, giving the broth body.
Beefsteak
Adds meaty, savory flavor to the broth during the long simmer.
Turkey or chicken
Contributes savory meat flavor and some gelatin to the broth.
Carrots
Add sweetness and color to the broth as they soften.
Turnips
Add mild sweetness and bulk, softening into the broth.
Flour
Thickens the strained soup as it boils, giving it a fuller texture.

The step that matters

Stirring the flour and water into the soup. Flour mixed directly into hot liquid clumps; whisking it first into cold water to a smooth slurry lets starch disperse evenly so the soup thickens smoothly.
