Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sturgeon
The main protein, which firms and turns opaque as it cooks.
Vinegar
Its acidity softens and flavours the fish during the long marinade.
Egg yolks
They bind the mustard and butter into an emulsified, smooth sauce.
Bread crumbs
They form a crisp, browned coating when fried.
Melted butter
Adds fat and richness, carrying flavour and moisture into the fish.

The step that matters

Frying in very hot fat. Very hot fat sears the bread crumb coating quickly, so it browns and crisps before the fish overcooks and becomes dry.
