Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Wheat flour
Forms the batter's body, giving the fritters structure as it sets in the hot fat.
Eggs
Bind the batter and help it set firm when fried.
Sweet milk
Adds moisture and softness to the batter, keeping the interior tender.
Clam liquor
Carries the clam flavour through the batter and adds moisture.
Sand clams
Provide the main seafood flavour and texture in each fritter.

The step that matters

Beat the batter until smooth and lump-free. Flour that is not fully hydrated and mixed forms dry pockets and lumps, which give uneven texture and can make the fritters crumbly when fried.
