Chicken Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Prepare the chicken as for fricassee and stew until tender.

  2. Remove the largest bones and scrape meat from the neck and backbone.

Assemble the pie

  1. Line a 4 or 6-quart pudding dish with biscuit dough, about ¼ inch thick.

  2. Layer part of the chicken in the dish, adding butter, salt, pepper, and sliced eggs.

  3. Add the remaining chicken and season again; include diced new potatoes if desired.

  4. Pour enough gravy over the mixture to fill the dish.

  5. Cover with a ¼ inch thick crust, making a hole in the center the size of a teacup.

Bake and serve

  1. Brush the top with beaten egg white and bake at 400°F (200°C) for 30 to 45 minutes.

  2. Garnish with small celery leaves arranged in a circle.

What each ingredient does

Chicken
Provides the main meat, which becomes tender through stewing and holds the filling together.
Gravy
Adds moisture and savoury flavour, keeping the filling from drying out as it bakes.
Eggs
Sliced boiled eggs add richness and body to the filling and firm slightly as it cools.
Biscuit dough
Forms a sturdy base and top crust that holds the filling and browns in the oven.
Butter
Adds fat for richness and a smoother, more savoury flavour throughout the filling.

The step that matters

Leaving the steam hole in the crust. The vent lets steam escape while the gravy and filling heat. Without it, pressure can build and push the crust apart or make the filling soggy.

Swap the potato

The recipe marks potato as optional. How well each one fits the dish's main ingredients (chicken, butter, pepper, egg, biscuit):

  1. Asparagusfits about as well
  2. Spinachfits about as well
  3. Capsicumfits about as well
  4. Potatothe original

Fit is the average pairing score against chicken, butter, pepper, egg, biscuit. Candidates are from the same food group and used in at least 100 recipes.
