Woodcock, Roasted

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the bird

  1. Skin the head and neck of the woodcock and pluck the feathers.

  2. Truss the bird by bringing its beak under the wing and fastening the pinion to the thigh.

  3. Twist the legs at the knuckles and press the feet against the thigh.

  4. Place a slice of bread under the bird to catch drippings.

Roast and serve

  1. Baste the bird with butter and dredge with flour.

  2. Roast in a hot oven at 400°F (200°C) for 15 to 20 minutes.

  3. Cut the bread into diamond shapes, large enough to hold the bird.

  4. Arrange the bread on a dish and serve with gravy to moisten it.

  5. Garnish with slices of lemon.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Woodcock
Is the main protein, cooked whole and trussed so it holds its shape in the oven.
Butter
Bastes the bird, adding fat that carries heat and promotes browning on the skin.
Flour
Dredged over the bird, helping the surface brown and form a crisp coating.
Bread
Catches drippings underneath the bird and forms a base that soaks up juices.
Gravy
Served over the bread to moisten it with savoury liquid.

The step that matters

Roast in a hot oven at 400°F (200°C) for 15 to 20 minutes. A small bird cooks quickly, so overcooking dries the meat. A hot oven browns the flour and butter coating fast, and checking doneness near the lower end of the time protects tenderness.

Swap the lemon

How well each one fits the dish's main ingredients (bread, butter, flour):

  1. Raisinfits better
  2. Figfits better
  3. Vanillafits better
  4. Lemonthe original

Fit is the average pairing score against bread, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
