What each ingredient does

Beef heart
Forms the meat of the stew, becoming tender through long, slow cooking.
Browned flour
Thickens the stew liquid into a smooth, slightly richer sauce when mixed into a paste.
Butter
Adds fat and richness to the stew broth.
Celery
Contributes aromatic flavour as it softens in the simmering liquid.

The step that matters

Stew until the meat is very tender. Heart is a dense, muscular meat that needs long, gentle simmering to break down its connective tissue. Cooking too briefly or at a hard boil leaves it tough and chewy.
