What each ingredient does

Sweetbreads
Provide the main body of the croquettes, chopped into a paste that gives a soft, tender filling.
Egg yolks
Bind the mixture and add richness and a smooth, set texture.
Butter
Adds fat for richness and a tender mouthfeel in the filling.
Cream
Adds moisture and softness to the filling so it holds together smoothly.
Cracker crumbs
Give the stiff mixture body and form a crisp, browning outer coating.
Beaten eggs
Act as a binder so the crumb coating adheres evenly before frying.

The step that matters

Frying in hot fat until golden brown. If the fat is not hot enough, the coating absorbs oil and turns greasy before it browns; if too hot, the outside darkens before the filling is heated through.

Swap the onion

How well each one fits the dish's main ingredients (veal, vinegar, pepper, egg, butter, cream, lemon):

  1. Capsicumfits better
  2. Asparagusfits better
  3. Spinachfits better

Fit is the average pairing score against veal, vinegar, pepper, egg, butter, cream, lemon. Candidates are from the same food group and used in at least 100 recipes.
