Why it works: Potato and pepper are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 8,305 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Baked Mutton Chops and Potatoes

Oven, in the book's wordsA very hot oven

Ingredients

Directions

The book says “a very hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash and peel the potatoes, then slice them into ¼‑inch thick rounds.

  2. Rinse the potato slices in cold water to clean them thoroughly.

  3. Trim excess fat from the mutton chops and shape them with a skewer.

Layer and brown the potatoes

  1. Layer the potato slices in a baking dish, sprinkling salt and pepper between each layer.

  2. Add enough cold water to the dish to prevent burning.

  3. Place the dish in a very hot oven (400°F / 200°C) on the top shelf to brown the potatoes.

Bake the chops

  1. Once the potatoes are browned, remove the dish from the oven and place the chops on top.

  2. Season the chops with more salt and pepper, and add water if needed.

  3. Return the dish to a cooler part of the oven (350°F / 175°C) and cook for about 45 minutes.

  4. When the chops are browned on one side, turn them over to brown the other side.

  5. If the potatoes are drying out, add hot water gently to one corner of the dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form a layered base that absorbs seasoning and browns on the hot top shelf.
Mutton chops
Provide the main meat, which browns on the surface and cooks through in the oven.

The step that matters

Adding water to the dish before the potatoes brown. Cold water in the dish keeps the potatoes from scorching in the very hot oven, while the potatoes still brown on their exposed surfaces. Adding water when the potatoes dry out helps prevent burning and keeps them moist.

Swap the potato

How well each one fits the dish's main ingredients (pepper, mutton):

  1. Capsicumfits better
  2. Carrotfits better
  3. Tomatofits about as well
  4. Potatothe original

Fit is the average pairing score against pepper, mutton. Candidates are from the same food group and used in at least 100 recipes.
