Why it works: Vinegar and mustard are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 14,067 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Coral and spawn
- Provides the rich lobster flavor and the orange color of the sauce.
- Sweet butter
- Forms the fat base that gives the sauce its smooth, rich body.
- Prepared mustard
- Adds a sharp, tangy note that balances the richness of the butter.
The step that matters
Stir until smooth. Butter emulsifies into the warm liquid only when it is kept moving. If the sauce is left to sit or cools too much, the fat can separate and the texture turns greasy.
Swap the mustard
How well each one fits the dish's main ingredients (lobster, butter, vinegar, pepper, meat):
- Mustardthe original
- Capsicumfits about as well
- Shallotfits less well
- Potatofits less well
Fit is the average pairing score against lobster, butter, vinegar, pepper, meat. Candidates are from the same food group and used in at least 100 recipes.
