What each ingredient does

Tomatoes
Form the bulk of the sauce and break down into a thick, reduced body.
Sugar
Adds sweetness and helps thicken the sauce as it cooks down.
Vinegar
Adds acidity that sharpens the flavour and helps preserve the sauce.
Green peppers
Contribute vegetable bulk and a mild, fresh bitterness; cayenne can replace them for heat.

The step that matters

Boil until thick before adding the vinegar. Cooking the tomatoes, sugar and onion down first drives off water and concentrates flavour and body, so the sauce sets thick rather than thin after straining and bottling.
