What each ingredient does

Cabbage
Is the main vegetable that becomes tender and absorbs the pickling liquid.
Coarse sea salt
Draws water out of the cabbage overnight, softening it and concentrating its flavour for pickling.
Vinegar
Provides the acidity that preserves the cabbage and gives the pickle its sharp taste.
Brown sugar
Balances the sharpness of the vinegar with sweetness and adds depth to the syrupy liquid.
Prepared mustard
Adds sharp, pungent flavour that rounds out the spiced vinegar liquid.

The step that matters

Squeezing the salted cabbage. Salt draws water out of the cabbage overnight, so it must be squeezed well before cooking. Leftover moisture would dilute the vinegar and weaken both the flavour and the pickle's keeping quality.
