What each ingredient does

Eggs
Form the main body of the pickle, soaking up the spiced vinegar as they rest.
Vinegar
Provides the acidity that sharpens flavor and helps preserve the eggs.
Mustard seeds
Add sharp, pungent heat that mellows during the resting period.
Allspice
Adds warm, aromatic flavor to the pickling liquid.

The step that matters

Keep the eggs fully covered by the vinegar. Vinegar must cover the eggs so the acid can penetrate evenly and the exposed parts do not spoil or pickle unevenly. Pressing the eggs down and sealing the jar keeps them submerged during the resting period.

Swap the ginger

The recipe marks ginger as optional. How well each one fits the dish's main ingredients (egg, vinegar, white pepper, allspice, mustard, garlic, horseradish):

  1. Tarragonfits better
  2. Capersfits better
  3. Dillfits better
  4. Gingerthe original
