Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Butter the sides and bottom of a pudding dish.

  3. Layer bread crumbs in the bottom of the dish.

Layer and bake

  1. Add a layer of sliced tomatoes, then sprinkle with salt, pepper, bits of butter, and a little white sugar.

  2. Repeat the layers of crumbs, tomatoes, and seasoning until the dish is full.

  3. Finish with a top layer of sliced tomatoes and bits of butter.

  4. Cover and bake until cooked through, then remove the cover and brown quickly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Form the body of the layers and soak up the tomato juices as they bake.
Sliced tomatoes
Provide the main moisture and acidity that cook down into the sauce.
Butter
Adds richness and fat, helping the top layers brown.
White sugar
Adds sweetness that balances the acidity of the tomatoes.

The step that matters

Remove the cover and brown quickly. Covered baking traps steam so the top stays pale; uncovering at the end lets surface moisture evaporate and the butter and sugar caramelise and brown. Watch closely, as the top can scorch once exposed.

Swap the tomato

How well each one fits the dish's main ingredients (butter, bread, pepper, sugar):

  1. Capsicumfits better
  2. Potatofits about as well
  3. Sweet potatofits about as well
  4. Tomatothe original

Fit is the average pairing score against butter, bread, pepper, sugar. Candidates are from the same food group and used in at least 100 recipes.
