Curds and Cream

Ingredients

Directions

Make the curd

  1. Pour 1 tablespoon of prepared rennet into each quart of milk.

  2. When the milk has curdled, tie it loosely in a thin cloth and hang it to drain without wringing or pressing.

  3. Once drained, place the curd in a mug and set it in cool water, changing the water frequently.

Serve

  1. When ready to serve, gently ladle out any whey from the mug without pressing the curd.

  2. Transfer the curd to a deep dish and pour fresh cream over it.

  3. Serve with powdered loaf sugar and a nutmeg grater.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Its proteins coagulate into the curd that forms the body of the dish.
Prepared rennet
An enzyme that causes the milk to set into curds and separate from the whey.
Fresh cream
Adds richness and a smooth, fatty mouthfeel to the mild curd.
Powdered loaf sugar
Adds sweetness to balance the mild, slightly tangy curd.

The step that matters

Draining without wringing or pressing. Squeezing the cloth or pressing the curd forces out moisture and packs the proteins tightly, making the curd dense and grainy instead of soft and tender.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, sugar, cream):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Peppermintfits less well

Fit is the average pairing score against milk, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
