Why it works: Butter and milk are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 81,283 recipes. Both carry (z)-4-heptenal, which smells biscuit, cream. The science ↓
Mushroom Omelet
Ingredients
Directions
Make the mushroom filling
Melt the butter in a saucepan over medium heat.
Add the chopped mushrooms, salt, pepper, and cream or milk.
If needed, dissolve the flour in a little milk or water and stir in to thicken.
Boil for 10 minutes, then set aside until the omelet is ready.
Finish and serve
Prepare a plain omelet as usual.
Just before folding the omelet, add the mushroom mixture to the center and serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Button mushrooms
- Provide the main filling, releasing moisture and savory flavor as they cook.
- Butter
- Adds richness and carries flavor while the mushrooms cook in the saucepan.
- Cream or milk
- Adds moisture and a creamy body to the mushroom filling.
- Flour
- Thickens the liquid so the mushroom mixture holds together inside the omelet.
The step that matters
Thickening with flour. Flour must be dissolved in a little liquid before stirring in, otherwise it forms lumps and does not thicken the mixture evenly. Boiling then activates its starch so the filling becomes cohesive rather than watery.
