Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Thicken the custard as they cook and add richness to the filling.
Flour
Thickens the milk mixture so the filling sets smooth instead of runny.
Sugar
Sweetens the filling and helps soften the custard texture.
Milk
Forms the liquid base that the eggs and flour thicken into custard.

The step that matters

Cooking the custard until thickened. Egg proteins and starch set as the mixture heats, but if it is overcooked the eggs can scramble and curdle. Stir constantly and cook only until it coats a spoon.

Swap the nuts

The recipe marks nuts as optional. How well each one fits the dish's main ingredients (milk, egg, flour, sugar, vanilla):

  1. Almondfits better
  2. Chestnutfits better
  3. Hazelnutfits better
  4. Nutsthe original

Fit is the average pairing score against milk, egg, flour, sugar, vanilla. Candidates are from the same food group and used in at least 100 recipes.
