Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. In a saucepan, stir cornmeal, powdered sugar, and nutmeg into boiling milk.

  2. Boil for 5 minutes, stirring constantly to prevent sticking.

  3. Remove from heat and let cool.

  4. Once cool, stir in the beaten eggs until well mixed.

Bake and serve

  1. Pour the mixture into greased teacups, filling them nearly full.

  2. Bake in a 350°F (175°C) oven for 30 minutes.

  3. Serve with lemon sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the puff's structure as they bake, giving it lift and a custard-like body.
Cornmeal
Thickens the boiled milk and gives the puff its grainy, tender body.
Milk
Provides the liquid base that cooks the cornmeal and moistens the finished puff.

The step that matters

Stirring while the mixture boils. Cornmeal settles and scorches on the bottom of the pan when boiled in milk, so constant stirring keeps it smooth and prevents sticking.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, sugar, egg, butter):

  1. Cinnamonfits better
