What each ingredient does

Tea
Supplies the flavor and aroma compounds that the hot water draws out.

The step that matters

Keeping the teapot very hot but not boiling. Steeping at too low a temperature extracts flavor slowly, while boiling water can draw out harsher, bitter compounds from the leaves.
