What each ingredient does

Tartaric acid
Supplies the sour taste and reacts with the blue-paper contents to release fizzing carbon dioxide.

The step that matters

Drink quickly while foaming. The fizz comes from carbon dioxide gas that escapes from the liquid within minutes. Waiting lets the foam collapse and the drink lose its sparkle.
