Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fine indian meal
Cornmeal forms the body of the gruel as its starch thickens when cooked in water.
Boiling water
Hot water gelatinises the cornmeal starch, turning the mixture thick and smooth.
Cream
Adds fat for a softer, richer mouthfeel in the finished gruel.

The step that matters

Mix the meal with cold water until smooth. Cornmeal starch clumps when it meets hot water directly. Starting with cold water lets the particles disperse evenly, so the gruel cooks smooth rather than lumpy.

Swap the ginger

The recipe marks ginger as optional. How well each one fits the dish's main ingredients (cream, sugar, bread):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Celeryfits about as well
  4. Gingerthe original

Fit is the average pairing score against cream, sugar, bread. Candidates are from the same food group and used in at least 100 recipes.
