Chicken Jelly

Ingredients

Directions

Make the broth

  1. Cook the chicken in enough water to cover it.

  2. Let it stew gently until the meat falls from the bones and the broth reduces to about 1 pint.

  3. Season the broth with salt and pepper.

  4. Strain and press it through a colander, then through a coarse cloth.

  5. Return the strained broth to the heat and cook for a few more minutes.

Set and serve

  1. Pour the broth into an earthen dish and refrigerate until it hardens.

  2. Serve cold in slices, or make sandwiches with thin slices of bread spread lightly with butter.

What each ingredient does

Chicken
Its collagen and connective tissue release into the broth, which gives the jelly its body when chilled.

The step that matters

Reducing the broth to about 1 pint. Gelling depends on concentration. If the broth is too thin after reduction, it will not set firmly when cold, so the cook should reduce it fully before straining.
