Why it works: Beef and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash the ribs and season with salt and pepper.

  2. Dredge the ribs with a little flour.

Roast

  1. Roast the ribs on a spit before a clear fire, basting frequently.

  2. When browned, place on a dish and prepare gravy as directed in article 46.

  3. Alternatively, place in a roasting pan, season, dredge with flour, and add 1 tablespoon of flour and 1 ½ cups of water.

  4. Stir well and roast in a moderately hot oven at 350°F (175°C), basting frequently.

Finish and serve

  1. When done, place on a heated dish, remove excess fat from the gravy, and adjust seasoning if necessary.

  2. Baste the meat with gravy, pour into a sauce-tureen, and serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef ribs
Provide the main meat, which browns and becomes tender as it roasts.
Flour
Dredging coats the meat and, stirred into the pan liquid, thickens the gravy.
Water
Forms the thin liquid base of the gravy, dissolving pan drippings as it cooks.

The step that matters

Basting frequently while roasting. Spooning hot fat or liquid over the meat keeps its surface moist and helps it brown evenly, so the outside does not dry out before the inside is cooked.
