Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Pour boiling water over the tomatoes.

  2. Let the tomatoes stand for a few minutes.

  3. Remove the skins from the tomatoes.

  4. Remove the seeds from the tomatoes.

Stuff and arrange

  1. Fill the cavities of the tomatoes with a dressing made from bread crumbs, butter, onions, salt, and pepper.

  2. Place the tomato halves together.

  3. Rub the tomato halves with a little salt and pepper.

  4. Arrange the tomato halves in a flat pan.

  5. Top each tomato with a small piece of butter.

Bake and serve

  1. Bake the tomatoes in a 400°F (200°C) oven until done.

  2. Serve hot.

What each ingredient does

Tomatoes

Butter
Adds richness and fat, carrying flavor and helping the surface brown in the oven.
Onions
Add aroma and mild sweetness as they soften and cook in the dressing.
