What each ingredient does

Eggs
Whisked eggs set into the omelette's structure, giving it its body when cooked.
Flour
Thickens the egg mixture slightly, helping it hold together when cooked.
Milk
Adds moisture and softness to the eggs, keeping the omelette tender.
Onion
Softens and sweetens as it cooks, adding savoury depth to the filling and sauce.
Tomatoes
Break down into the sauce, adding moisture and gentle acidity.

The step that matters

Cook the egg mixture until firm. Cooking the egg mixture until it is just set, without overcooking, keeps the omelette tender and prevents it from becoming dry or rubbery before the sauce is added.
