What each ingredient does

Ground mocha
Provides the main coffee flavour and aroma as it steeps in the boiling water.
Sugar
Adds sweetness and helps balance the bitterness of the coffee.

The step that matters

Removing from heat when it bubbles. Boiled coffee can foam over quickly and taste bitter when overheated. Lifting the pot off the heat at the first bubbles controls the foam and the extraction.
