What each ingredient does

Sugar
Sweetens the punch and balances the sharpness of the lemon juice.
Lemon rind
Releases fragrant oils that flavour the syrup during infusion.
Lemon juice
Adds acidity that brightens the punch and balances the sugar.
Rum
Adds alcohol and depth of flavour to the punch.

The step that matters

Infuse in a warm place for several hours. Citrus oils and spice compounds dissolve slowly into hot syrup, so too short an infusion leaves the punch weak and the rind flavour thin. Keeping it warm, not boiling, helps extraction without bitterness.
