What each ingredient does

Eggs
Bind the mixture so it holds together when steamed and turned out.
Stale bread
Absorbs liquid and adds body, giving a softer, more tender texture.
Fat bacon
Adds fat and moisture, keeping the mixture from drying out during steaming.
Sheep tongue, liver and kidneys
Form the main body of the dish and give its rich, savoury flavour.

The step that matters

Pour the mixture into the mold and steam. The mixture must be packed firmly into the mold without air pockets and steamed gently for the full hour. Gentle steam sets the egg and bread binder so the pudding holds its shape when turned out.
