Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberry pulp
Provides the fruit flavour and most of the liquid base of the cream.
Gelatin
Sets the liquid pulp into a sliceable, wobbly structure as it cools.
Sugar
Sweetens the cream and balances the tartness of the fruit.
Whipped cream
Adds air and fat, giving the set cream a light, creamy texture.

The step that matters

Stir until the mixture is almost firm. Gelatin begins setting as it cools. If the mixture is folded with cream after it has set too far, lumps of gel form and the cream loses its smooth texture. Stop stirring at the almost-firm point, before the gel sets solid.
