What each ingredient does

Ground mocha
Provides the coffee flavor and body, as the fine grounds are cooked directly in the water.
Sugar
Adds sweetness and softens the bitterness of the finely ground coffee.

The step that matters

Remove from heat when it bubbles. As the coffee nears boiling, it foams up quickly and can boil over. Removing it at the first bubbles keeps the foam, which helps give Turkish coffee its body.
