Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Neck of mutton
Provides the meat and bones that give the broth its body and rich flavor.
Washed rice
Releases starch as it cooks, thickening the broth slightly.
Turnip
Adds subtle sweetness and earthy flavor as it softens in the broth.
Celery
Contributes aromatic, savory flavor to the simmering broth.

The step that matters

Skim while the broth first boils. Fat and foam rise to the surface as the broth heats. Skimming them early keeps the broth clear and prevents greasy, cloudy results once the long simmer begins.

Swap the celery

How well each one fits the dish's main ingredients (mutton, rice, turnip):

  1. Turmericfits about as well
  2. Capersfits about as well
  3. Celerythe original
  4. Parsleyfits less well

Fit is the average pairing score against mutton, rice, turnip. Candidates are from the same food group and used in at least 100 recipes.
