What each ingredient does

Parsnips
Provide the main body and sweet, earthy flavor of the soup once pureed.
Onions
Add savory depth and aroma as they soften in the stock.
Celery
Contributes aromatic, savory background flavor to the stewed base.
Stock
Supplies the liquid that cooks the vegetables and forms the soup's body.

The step that matters

Stew the vegetables until tender. Parsnips must be fully softened so the puree is smooth after pressing; undercooked pieces will stay grainy and clog the sieve.
